My husband loves any excuse to barbecue and 4th of July is no exception.

Ribs is one of our all-time grilling favorites. These Apple-Glazed Baby Back Ribs are to-die-for!  Serve them with corn, coleslaw, Wild Harvest Organic Blue Corn Tortilla Chips and salsa and you’ve got a great holiday menu.

For dessert, I love the look and taste of the Patriotic Parfaits. Easy to make ahead and no trouble to serve so you can lay back and get ready for the fireworks.

Skinny Poolside Dip & Party Invitations

This sounds so good! I’m making it this weekend to enjoy around the pool!

Ingredients:

1 red pepper
2 jalepenos (unseeded – leave seeds in if you want spicer)
1 can of corn
1/2 can diced olives
16 oz fat-free cream cheese (softened)
1 packet Hidden Valley Ranch dip seasoning mix.

Mix ingredients together. Serve with crackers or raw veggies.

Then dive right in!

Blue Sparkling Star Cocktails

I’m not sure I’ve ever had a blue cocktail before – don’t think I’ve ever ordered a Blue Hawaiian, and I have to say, the blue of the Blue Sparkling Star Cocktail is amazing! These would be so pretty for a holiday party or New Year’s Eve celebration!

Blue Sparkling Star Cocktails

Ingredients:
2 ounces orange infused vodka
2 ounces blue curaçao
Champagne

Instructions:
Rim 2 champagne glasses with blue cocktail sugar.
Pour 1 ounce orange infused vodka into each of the prepared champagne glasses.
Pour 1 once blue curaçao into each into each of the prepared champagne glasses.
Top each glass with champagne

4th of July Poprocks Firecracker CookiesWhether it’s for Memorial Day or the 4th of July, we seem to be on a mission to find the coolest red, white and blue, items and ideas to celebrate America.

I have to say, the Pop Rocks Firecracker Cookies are a hit with kids of all ages!

Not sure what Pop Rocks are? Ask any kid and they’ll tell you all about them, in great detail.

These might look like pretty cookies decorated with cute little sprinkles, but wait until you bite into one!

The unsuspecting guest that mindlessly pops one these babies in their mouth is a sight to behold.

The ensuing Pop Rocks explosion deserves a spot on candid camera.

Decorate your favorite cookie recipe with a touch of frosting and sprinkle with red and blue Pop Rocks.  (Strawberry and Watermelon flavors are red sprinkles.)

 

TIPS:

  • The moisture in the frosting will make the Pop Rocks start popping, so either put less frosting on or wait until you are about to serve them to frost and add the Pop Rocks.  My cookies could be heard across the room popping away right after I frosted them.
  • If you want to keep it a secret that you’re using Pop Rocks, put them in a container or plastic bag if you’re adding them to your cookies later or away from home.
  • If you live where it’s humid, your Pop Rocks might all be popped out before you can serve them.  By the next day, the Pop Rocks added flavor to the cookies, but sadly, no popping.

Should your Party Invitations state Appetizers or Hors d’oeuvres?

Many invitations state appetizers and/or hors d’oeuvres will be served.

Are they just synonyms or is there really a difference?

What is the difference between appetizers and hors d’oeuvres?

What is the difference between Hors d'oeuvres and Appetizers? What should you use on your party invitations?

Hors d’oeuvres are served BEFORE the meal and can be associated with finger foods, i.e. no utensils provided.

Appetizers are served DURING the meal as a first course.

Some examples of hors d’oeuvres would be something on a piece of bread, toast point, cracker, etc. such as pate, smoked salmon and caviar, etc.

Also, if you see that your invitation says heavy hors d’oeuvres, that means that there is no meal afterward, they ARE the meal vs. appetizers, which usually means there is a meal to follow.

If you’re invited to a cookie party for the holidays or just want a fabulous recipe everyone will love, these low-carb Snickerdoodles  will be a favorite for the calorie counters in the crowd.

Ground almonds create an “almond flour” which is a wonderful substitute for wheat flour for many baking recipes.


Low-Carb Snickerdoodles Cookie Recipe

Ingredients:

  • 1/2 cup butter, softened
  • 1-1/2 cups almond flour
  • 1 cup granulated Splenda
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons granulated Splenda or low carb sweetener
  • 1-2 teaspoons cinnamon

Directions:

In a medium bowl, beat butter until creamy.

Add half the ground almonds, 1 cup Splenda, egg, vanilla, baking soda and cream of tartar. Beat until well combined.

Beat in remaining ground almonds.

Cover and chill in bowl for 1 hour.

Pre-heat oven to 350 F.

In a small bowl, combine the 2 tablespoons Splenda and the cinnamon; mix well.

Roll chilled dough into 1-inch balls.

Gently roll each ball in the cinnamon-Splenda mixture to coat and place 2 inches apart on an ungreased baking sheet.

Bake 10-12 minutes until lightly browned at the edges.

Carefully remove from pan to cooling rack to cool completely.

Makes about 26 cookies. Note: 1.5 net carbs per cookie

The secret to a fabulous margarita is fresh lime juice. Not in the mood to squeeze all those limes? Try Simply Limeade (available in grocery stores) and save time when making your own version of  a killer margaritas.

Easy frozen margaritas:

  • 1 (6-ounce) can limeade, frozen
  • Gold tequila (or any good-quality tequila)
  • Triple sec
  • Ice
  1. In a blender, add frozen limeade.
  2. Then using the empty limeade can as a measuring device, add one can tequila and ½ can triple sec.
  3. Fill blender with ice and blend until frozen.
  4. Add more ice as it blends down. The blender should be full when finished.
  5. Pour into glasses and garnish with lime.

Frozen Margarita on Cinco de Mayo

An interesting margarita that grabbed my attention is a specialty of a 5- star hotel in Southern California – the Avocado Margarita.

I’m not sure I’m brave enough to try it yet – I’ll think I’ll stick to eating avocados in my guacamole.

Cocktail of the Belmont Stakes: The White Carnation

The White Carnation was the traditional drink of the Belmont Stakes, the third and final race in the Triple Crown of Thoroughbred Racing, until 1997 when it was replaced with the Belmont Breeze.

Refreshing and easier to make than the Kentucky Derby’s Mint Julep, this is fun cocktail to offer Belmont party guests.

Ingredients:

  • 2 oz. Vodka
  • 1/2 oz. Peach Schnapps
  • 2 oz. Orange Juice
  • 1/2 oz. Soda or Club Soda (more if you prefer)
  • Splash of Cream
  • Crushed ice

Preparation:

Stir liquors, orange juice and soda together and pour over ice in a highball or martini glass. Splash cream over top. Garnish with an orange slice.

Makes 1 drink.

Talk Derby to Me: Mint Julep Recipe

The official drink of the Kentucky Derby is the Mint Julep. If you’re thinking about serving original Mint Juleps at your Kentucky Derby Party, you will need to start them way in advance and whichever recipe you choose, you will need lots and lots and lots of crushed or shaved ice!

The original mint julep takes 4-6 hours for the bourbon-sugar mixture to sit or you can make the quick  or really quick versions that don’t require any wait time for the flavors to blend.


Original Mint Julep Recipe

Ingredients:

  • 1/2 cup sugar
  • 1 cup water (prefer distilled or bottled)
  • 8 fresh mint sprigs finely chopped (Use only the leaves, no stems)
  • 1 quart bourbon (Early Times, Jim Beam but Wild Turkey will suffice)
  • Fresh mint sprigs for garnish

Preparation:
Combine sugar, water, chopped mint leaves and bourbon in a glass container and stir until the sugar dissolves*. Cover and let stand 4 -6 hours.

To serve:
Strain the bourbon-sugar mixture into a large pitcher and discard the chopped mint. Fill your choice of glass with cracked ice; add bourbon-sugar mixture, and garnish with mint sprigs. *You might want to make extra of the bourbon-sugar mixture so you don’t run out.

Quick Kentucky Derby Mint Juleps Recipe

Makes one mint julep

Ingredients:

  • 1 tsp sugar
  • 1/4 oz water
  • bourbon
  • mint sprigs
  • crushed ice

Directions:

In a bowl, place several fresh mint sprigs (without stems), 1 tsp. of sugar and 1/4 ounce of water.

Crush the leaves with a spoon or a muddler and stir until sugar dissolves.

Fill a chilled tumbler with crushed ice, fill with choice of Bourbon and top with strained sugar-mint mixture. Or place a bit of the sugar-mint mixture into the chilled glass.

Add a layer of crushed ice. Continue at least one more time, topping with ice, then top off with bourbon.

Garnish with fresh mint sprigs.

Serve and enjoy!

Really, Really Quick Mint Julep Recipe for a Crowd

Ingredients:

  • 2 cups sugar
  • 2 teaspoons pure mint extract (not peppermint)
  • 2 drops green food coloring
  • Water
  • Bourbon Whiskey

Directions:
Combine first three ingredients in a container a little larger than one gallon. Add water to make a gallon. Stir until the sugar is dissolved.

For each drink, fill the cup to the brim with cracked or shaved ice. Pour 2 ounces of bourbon over the ice. Pour 2 ounces of the mix over ice. Garnish with a sprig of mint.
