Ten 4th of July Red White Blue DessertsDecorating with red, white and blue for the 4th of July is pretty simple.  You can find those colors in table ware, stars and stripes bunting and of course American Flags are easy to come by.

Red, white and blue food, however, is a different matter.

Thankfully, summer fruits such as strawberries, blueberries, cherries, watermelon, pineapple, and even rhubarb, can be used to create fabulous treats.

I love pralines!  Every fall, I swear I am going to make them and this year I just might succeed with this fabulous recipe.

Recipe for Pecan Pralines

Pralines were first created in the 1700′s by a French chef for the French diplomat Cesar du Plessis-Praslin. They were first created using from almonds that were coated with a cooked syrupy sugar. When a New Orleanian businessman brought some home from Paris his cook substituted plentiful pecans for the almonds and heavy cream to thicken the candy.

Pineapple Upside Down Cupcakes

One of my dad’s favorite desserts was pineapple upside cake. If we had thought to make these in cupcake pans, we probably would have made a whole lot more of them! Easy cupcake pineapple upside down cupcakes are so yummy. You can make these with pineapple rings or pineapple chunks.

Chocolate Black Bean Snack Cakes

These chocolate snack cakes have a healthy bonus of a can of black beans. No one will know they are there.  No one will be able to detect that you carefully popped open a can of black beans, rinsed them under water and added them to your snack cake batter. No one.

Cut them into 16 servings for only 100 calories or cut them into 8 for a mere 200 calories.

Mini Rice Krispie Treats Ice Cream Cones

Rice Crispie Ice Cream Cones

Here’s a cute idea for treats or for a child’s birthday party. The ice cream cones are teeny, tiny – about 1-.75″ tall (Joy Kids Cones from Walmart).

A cookie scoop or small melon baller is used to form the ice cream from the Rice Krispie mixture, then drizzled with melted almond bark or candy melts.  To make the cones more stable, you can put some candy in the cone, then use the candy melts to “glue” the scoop to the cone.  See tutorial at Cute As a Fox.
