Pumpkin Chai Latte Recipe

If you’re loving all things pumpkin this time of year, instead of spending $5 for a cup, make your own Pumpkin Chai Latte.  You could even steal a little pumpkin puree from the pie you’re going to bake to make your latte.

Ingredients per cup:
  • 1 cup milk
  • 1 tablespoon raw sugar (or regular)
  • 1-2 tablespoons pumpkin canned puree
  • 1 tablespoon vanilla extract
  • 1/2 – 1 cup strong coffee
  • 1/4 teaspoon chai spice and/or pumpkin pie spice
  • Whipped cream (or ice cream, vanilla or pumpkin)

In a sauce pan (or microwave safe cup) heat milk, spice and sugar until warm and bubbly and the sugar is dissolved. Whisk with a fork or whisk until foamy and light. (you can absolutely use an immersion blender, cappuccino foam attachment  or regular blender to make the ultimate frothy foam, but using a fork will cut down on cleanup.) Combine with pumpkin and vanilla. Pour desired amount of milk and pumpkin mixture into hot scented coffee. Garnish with whipped cream, ice cream (or both) and sprinkle with spice to garnish.

Loaded Skinny Potato Salad

If you enjoy baked potatoes, you will love this recipe! It has less than 1/2 the calories and fat than a traditional potato salad recipe, and it’s guaranteed to be a crowd pleaser! If you’re really watching your calories, try substituting cauliflower for potatoes.

Ingredients:

  • 3/4 cup light sour cream (or try fat free)
  • 3/4 cup low fat/fat free mayonnaise (or fat free/light miracle whip)
  • 8 slices bacon, cooked, and chopped (about 1/2 cup) or try turkey bacon
  • 1/2 cup chopped red onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 medium baking potatoes (about 2 pounds)
 OR 6 medium sweet potatoes
  • 1/2 cup low fat shredded cheddar cheese

Pumpkin Spiced Pancakes Recipe

Fabulous taste for fall, Pumpkin Spiced Pancakes!

Ingredients:

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Directions:

In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
