Pumpkin Swirl Truffle Brownies

Pumpkin Swirl Truffle Brownies

  • 1 box TJ’s Brownie Truffle Baking Mix
  • 1 box TJ’s Pumpkin Bread and Muffin Mix
  • 4 large TJ’s Eggs
  • 1 stick (4 oz.) TJ’s Unsalted Butter
  • ½ cup TJ’s Canola Oil
  • 1 cup Water
  • 1 quart Pilgrim Joe’s Pumpkin Ice Cream

Preheat oven to 350º F. In a large mixing bowl, prepare Brownie Truffle Baking mix according to package directions. In another large mixing bowl, prepare Pumpkin Bread Mix according to package directions. Pour brownie mixture into a greased 9″ x 12″ baking pan and spread across pan. Pour the pumpkin mixture over the brownie mixture, and with a large stiff spatula swirl the two mixes together to make a marble effect. Place in oven and bake for 40 minutes, or until toothpick inserted in center comes out clean. Allow to cool, cut and serve with a scoop of Pumpkin Ice Cream!

CranRaspberry Martini is a Cool Non-Alcoholic Treat

Martini on Hot Pink Party InvitationsWant a cool, refreshing drink without the alcohol? Try serving CranRaspberry Martinis at your next get together.

  • 1 tbsp crushed raspberries
  • 1/4 cup all natural cranberry juice (try low calorie version too)
  • 2 tbsp fresh lime juice
  • Splash of raspberry flavored sparkling water
  • Garnish by floating a raspberry or two

Pour Cranberry juice and sparkling water into martini glasses.  In a shaker, add crushed raspberries, lime juice and ice and shake until blended.  Strain this  mixture into the glasses, stir and garnish with one or two whole raspberries.

You can also wet the rim of your glasses with lime juice and dip into sugar poured onto a shallow plate.

Bacon Bundled BBQ Shrimp Recipe

This is a fantastic party recipe! The shrimp, bacon, and BBQ sauce combo makes it nearly impossible for anyone to believe that these are guilt-free in any way. Yet each one has less than 30 calories!

  • 16 large (not jumbo) raw shrimp, peeled, deveined, tails removed
  • 8 slices extra-lean turkey bacon, halved widthwise
  • 1/3 cup canned tomato sauce
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar (not packed)
  • 1 tablespoon cider vinegar
  • ½ teaspoon garlic powder

Preheat oven to 425 degrees. In a small bowl, combine tomato sauce, ketchup, sugar, vinegar, and garlic powder until mixed well. Set aside. Lightly spray a baking sheet with nonstick spray. Take ½ slice bacon and coat it in the sauce. Wrap the sauce-covered bacon around a shrimp and place it, seam side down, on the baking sheet. Repeat with the rest of the bacon and shrimp. Give them a quick mist with nonstick spray. Bake in the oven until shrimp are cooked through and bacon is crispy, 10 to 15 minutes.

FOUR-CHEESE STUFFED-SILLY MUSHROOMS:

Ingredients:

  • 6 medium-large baby bella mushrooms (each about 2 inches wide)
  • ¼ cup fat-free ricotta cheese
  • ¼ cup finely chopped onion
  • ¼ cup canned spinach, thoroughly drained and dried
  • 2 tablespoons fat-free cream cheese
  • 2 tablespoons shredded fat-free mozzarella cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon reduced-fat Parmesan-style grated topping
  • ½ teaspoon garlic powder
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt

Cluster of Grapes Party Invitation

When your party invitations state appetizers or hors d’oeuvres, here’s a receipe your guests will love that is low fat and low calorie:

Tarragon-Rice Stuffed Mushrooms

18 large white mushrooms
1/4 cup canned fat-free chicken broth
1 shallot or green onion, minced
1/2 cup cooked, cold long-grain white rice
2 teaspoons light mayonnaise
2 or 3 fresh basil leaves, chopped
 2 tablespoons freshly-grated parmesan cheese
1 teaspoon chopped fresh tarragon
2 teaspoons extra-virgin olive oil
 1/4 teaspoon paprika

Preheat oven to 375 degrees F. Remove the stems from the mushrooms and chop the stems finely.

In a nonstick frying pan over medium-high heat, bring the chicken broth to a boil. Add the shallot and mushrooms stems; cook, stirring occasionally, until the vegetables are tender and most of the liquid has evaporated, about 2 minutes. (more…)

1 Reynolds® Slow Cooker Liner
3 pounds sweet potatoes, peeled and cut into 1/2 inch cubes
1 1/2 cups diced apples
1/3 cup orange juice
1 cup packed brown sugar
4 tablespoons butter, melted
2 tablespoons flour
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
Glazed Pecans (optional)

Open the slow cooker liner and place it inside a 5- to 6 1/2 -quart slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl. (more…)

A Simple Trick to make your Holiday Turkey Simply Awesome

Roasted Turkey RecipePersonally, I can’t get enough turkey throughout the year, Thanksgiving and Christmas just isn’t enough for me. I probably make a turkey 4-5 times each year.  So, who makes the best turkey in your family, your Mom, Grandma, or Sister? Well, if you follow this trick that I use when making my turkey, the answer will be YOU!! 

The trick to making the best turkey ever, is called brining (basically a salt bath – and no, it doesn’t make the turkey salty.)  When you brine a turkey, it is the most moist, tender and juiciest turkey you will ever have, and it cuts down on cooking time by 20-30 minutes. You will need to do this the night before your turkey day because it has to sit in the brine for 12 hours.

Here is what you’re going to need for this fantastic brine:

1 gallon vegetable broth
1 cup sea salt
1 tablespoon crushed dried rosemary
1 tablespoon dried sage
1 tablespoon dried thyme
1 tablespoon dried savory
5 lb. bag of ice

Invited to a Cookie Party? Take Low Carb Almond Sugar Cookies

Low Carb Sugar Cookies RecipeGround almonds create an “almond flour” which is a wonderful substitute for wheat flour for many baking recipes.

1-1/4 cup almond flour
1 cup Splenda
1/4 cup butter, at room temperature
1 large egg
1 teaspoon vanilla
additional Splenda, for decorating

Pre-heat oven to 350 F. Line baking sheets with parchment paper or a non-stick baking mat.

Stir together flour and Splenda. Blend in butter, egg and vanilla until well mixed. Form into 1-inch balls on a cookie sheet and flatten each with a fork. Sprinkle with additional Splenda.

Bake for 8 minutes or until set but not brown. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.

About 33 calories per cookie.
