Refreshing Coconut Champagne Cocktail

This beautiful Coconut and Champagne cocktail is an unlikely combination of coconut water, grapes, vodka and champagne. If you’re not familiar with coconut water, it will be a refreshing find you’ll enjoy.

Ingredients:

1 oz vodka
2 oz unsweetened coconut water
Handful of grapes, cut in half and muddled with 1/2 teaspoon brown sugar
Champagne to fill glass

Directions:

Combine the vodka and coconut water in cocktail shaker with ice and shake to combine, pour into a tall glass or champagne glass, add grapes and top with champagne.

Easy Crockpot Salsa Chicken

Winter just begs for easy one-pot and crock pot meals that can be ready when you get home. This Crockpot Salsa Chicken recipe can be altered to your tastes, made spicer or mild, and most of the ingredients can usually be found in your kitchen to make throwing this meal together anytime a snap.

1 pound boneless skinless chicken breasts
1 can cream of chicken or cream of mushroom soup
1 cup salsa
1 package taco seasoning
1 cup sour cream (can use nofat or light)
1 can of your favorite beans – pinto, black beans (optional)
Chopped onions, for topping or cook with other ingredients (optional)
Chopped green onions, for topping (optional)
Shredded cheese, for topping (optional)
Avacado, for topping (optional)
Cilantro, for topping (optional)
Lime wedges (optional)
Optional: Serve over rice (cook rice separately)

Put the chicken, soup, and salsa in your slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. If shredding the chicken, pull the breasts out and shred; return back to slow cooker. Stir in sour cream and heat just until everything is combined. Serve over rice (if desired). Top with shredded cheese, avacado, cilantro, onions, hot sauce, lime wedges. Enjoy!

Easy way to serve Ice Cream ScoopsIf you’re serving ice cream and cake at your party, here’s a great idea to make a sticky situation a breeze.

Line a cupcake pan with paper baking cups, then place individual scoops of ice cream in them.  Put the pan in the freezer for up to several hours.

After you’ve cut the cake, remove the scoops from the paper baking cups and put them on the plates or serve the ice cream scoops in the cups, and drop them onto the plates. Source: Real Simple

Cheesy Quinoa Bites Recipe

With the first of January, I really try to be aware of what I’m eating. My son and I like Quinoa, but my husband’s not a big fan. I think this yummy recipe just might convert him.

We made them with the original recipe, then we’ve experimented with adding shredded zucchini and jicama and used almond flour instead of regular flour. Each time we’ve made them, they’ve been different, but yummy. How fun to serve these for brunch or a luncheon.

Copycat Olive Garden Salad Dressing Recipe

We go to Olive Garden for their salad and love their salad dressing.  By the time we’re done with the salad, there’s not much room for our meal! Here’s a copycat recipe of the salad dressing that just might have you staying home more often.

This recipe make a ton of dressing!

Ingredients:

  • 2 envelopes Good Seasonings Italian Dressing, prepared
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon dried Italian spices
  • 1 teaspoon salt
  • black pepper
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1 tablespoon mayonnaise
  • 3 tablespoons water

Directions:

  1. Prepare the two envelopes of Good Seasonings Italian Dressing as per the package directions.
  2. Separately, combine all other ingredients in a blender on high speed until combined, about 30 seconds.
  3. Add the prepared Good Seasonings Italian Dressing to the blender and pulse til blended. 
  4. Pour the dressing into a bowl or carafe and cover and refrigerate until ready to serve. 
  5. Stir or shake before serving.
