Pumpkin Chai Latte Recipe

If you’re loving all things pumpkin this time of year, instead of spending $5 for a cup, make your own Pumpkin Chai Latte.  You could even steal a little pumpkin puree from the pie you’re going to bake to make your latte.

Ingredients per cup:
  • 1 cup milk
  • 1 tablespoon raw sugar (or regular)
  • 1-2 tablespoons pumpkin canned puree
  • 1 tablespoon vanilla extract
  • 1/2 – 1 cup strong coffee
  • 1/4 teaspoon chai spice and/or pumpkin pie spice
  • Whipped cream (or ice cream, vanilla or pumpkin)

In a sauce pan (or microwave safe cup) heat milk, spice and sugar until warm and bubbly and the sugar is dissolved. Whisk with a fork or whisk until foamy and light. (you can absolutely use an immersion blender, cappuccino foam attachment  or regular blender to make the ultimate frothy foam, but using a fork will cut down on cleanup.) Combine with pumpkin and vanilla. Pour desired amount of milk and pumpkin mixture into hot scented coffee. Garnish with whipped cream, ice cream (or both) and sprinkle with spice to garnish.

Sugar Free Apple Cider Recipe

Nothing says autumn like hot apple cider, but when you’re trying to watch your calories or are diabetic, sugar is a no-no.  This recipe tastes like the real thing and you can have as much as you want and still watch your diet.

Ingredients:

  • 2 bags of Celestial Seasonings Cinnamon Apple Spice Tea
  • 1 lemon wedge
  • NuNaturals Stevia
  • 8 oz water

Boil water and pour over 2 tea bags. Let steep for a few minutes and then add stevia and juice from 1 lemon wedge. That’s it! Enjoy!

Pumpkin Swirl Truffle Brownies

Pumpkin Swirl Truffle Brownies

  • 1 box TJ’s Brownie Truffle Baking Mix
  • 1 box TJ’s Pumpkin Bread and Muffin Mix
  • 4 large TJ’s Eggs
  • 1 stick (4 oz.) TJ’s Unsalted Butter
  • ½ cup TJ’s Canola Oil
  • 1 cup Water
  • 1 quart Pilgrim Joe’s Pumpkin Ice Cream

Preheat oven to 350º F. In a large mixing bowl, prepare Brownie Truffle Baking mix according to package directions. In another large mixing bowl, prepare Pumpkin Bread Mix according to package directions. Pour brownie mixture into a greased 9″ x 12″ baking pan and spread across pan. Pour the pumpkin mixture over the brownie mixture, and with a large stiff spatula swirl the two mixes together to make a marble effect. Place in oven and bake for 40 minutes, or until toothpick inserted in center comes out clean. Allow to cool, cut and serve with a scoop of Pumpkin Ice Cream!

Serves: 12
Cooking Time: 50 Minutes

CranRaspberry Martini is a Cool Non-Alcoholic Treat

Martini on Hot Pink Party InvitationsWant a cool, refreshing drink without the alcohol? Try serving CranRaspberry Martinis at your next get together.

  • 1 tbsp crushed raspberries
  • 1/4 cup all natural cranberry juice (try low calorie version too)
  • 2 tbsp fresh lime juice
  • Splash of raspberry flavored sparkling water
  • Garnish by floating a raspberry or two

Pour Cranberry juice and sparkling water into martini glasses.  In a shaker, add crushed raspberries, lime juice and ice and shake until blended.  Strain this  mixture into the glasses, stir and garnish with one or two whole raspberries.

You can also wet the rim of your glasses with lime juice and dip into sugar poured onto a shallow plate.

Pool Party Invitations and Fun Water Games to Entertain

Kids in the Pool Party InvitationsA summer pool party is a blast for a birthday party or any special occasion.  Keeping kids entertained is easier when you can guide them in some fun pool games. 

Octopus
Choose a person to be “it”. They stand in the middle of the pool. Players line up on one side of the pool and try and swim to the other side without being tagged. The players who are tagged hold hands with “it” and for the next round all the players holding hands try and tag the swimmers as they try and make it to the other end of the pool. Keep going until all players have been tagged – then choose another “it” and start again. Lots of fun!

Noodle Joust
Select two players to sit on a blow up raft in the middle of the pool. Give each one a pool noodle and have them joust with the noodles and try and get each other off the raft. The winner takes on the next player.
