It’s summer and BBQ is the favorite buzzword when it comes to summer cooking.  We love to sit on the patio, kick back, relax and fire up the grill.  I always have my hubby barbecue extra chicken so lunch the next day (and beyond) is a snap.

One of my favorite recipes for left over barbecue chicken is this Eat Yourself Silly BBQ Chicken Salad full of healthy veggies.  I shred my left over chicken and mix with spinach (or lettuce), black beans, corn, avocado, jicama, green or red onions, Roma tomatoes and cilantro, toss with Ranch Salad Dressing, top with tortilla strips and serve.  Enjoy!

Sometimes a party calls for a signature cocktail and we’ve had some that were fabulous and some that needed a few more tweaks to get it right.

How about shots? When is the last time you were at a party that served a creative and tasty shot? Not a jello shot, although we have nothing against them, but a real shot that is something besides tequila, salt and a lime?

Whether it’s for Memorial Day or the 4th of July, we seem to be on a mission to find the coolest red, white and blue, items and ideas to celebrate America.

I have to say, the Poprocks Firecracker Cookies are a hit with kids of all ages!

Summer Hard Lemonade Recipe

I posted this recipe a few years ago, and it is still one of the most requested recipes on-line and with my friends.  And yes, beer tastes great in this lemonade. It really smooths out the taste and adds some fizz. Fabulous drink for a hot day, lounging at the pool, party with friends…or anytime!

Hard Lemonade Recipe

Ingredients: 
- 1 can frozen lemonade – make it with 3 cans of water (not the 4 1/3 cans called for – you’re adding other ingredients and it will be too watered down)
- 1 bottle of beer (makes 2 drinks)
- Vodka or lemon flavored vodka (you can leave out the vodka too)

To make individual drinks:
- Fill glass half full of ice
- Fill half full with lemonade
- Add one shot of vodka (more to your tastes or leave out)
- Fill to full with beer
- Stir and enjoy!

For a low calorie/low sugar version substitute:
- Crystal light lemonade (use about a third less water to retain a lemonade flavor when the beer is added)
- Use a 55-64 calorie beer

Bomb Pop Cocktail

4th of July Bomb Pop Cocktail Recipe

It seems our cocktail recipes are favorites among our readers and what’s a party without a fabulous signature drink (with alcohol or not.)

Here’s a fun cocktail that is served as a shot using Exclusiv Vodka called the Bomb Pop – great for the 4th of July.

  • 1/2 oz Exclusiv Orange
  • 1/2 oz Exclusiv Raspberry
  • 1/2 Red Curacoa
  • 1/2 Sour mix
  • Splash 7up
  • Grenadine

Pour first five ingredients into a shaker. Pour into a shot glass. Pour grenadine to sink to the bottom of the glass.
