Summer Hard Lemonade Recipe

I posted this recipe a few years ago, and it is still one of the most requested recipes on-line and with my friends.

And yes, beer tastes great in this lemonade. It really smooths out the taste and adds some fizz.

Fabulous drink for a hot day, lounging at the pool, party with friends…or anytime!

Hard Lemonade Recipe

Ingredients: 

  • 1 can frozen lemonade – make it with 3 cans of water (not the 4 1/3 cans called for – you’re adding other ingredients and it will be too watered down)
  • 1 bottle of beer (makes 2 drinks)
  • Vodka or lemon flavored vodka (you can leave out the vodka too)

To make individual drinks:

  1. Fill glass half full of ice
  2. Fill half full with lemonade
  3. Add one shot of vodka (more to your tastes or leave out)
  4. Fill to full with beer
  5. Stir and enjoy!

For a low calorie/low sugar version substitute:

  • Crystal light lemonade (use about a third less water to retain a lemonade flavor when the beer is added)
  • Use a 55-64 calorie beer

Easy Margarita Recipe for your Cinco de Mayo Party

To many of us in the United States, Cinco de Mayo – the celebration of the Mexican Army’s defeat of the French at the Battle of Puebla in 1862 – means enjoying Margaritas and fabulous Mexican food on May 5th with a Cinco de Mayo party at home or with friends at a local restaurant.

If you’re throwing your own Cinco de Mayo fiesta, you’ll find you can make an entire pitcher of margaritas for less than the cost of one restaurant version.

The secret to a fabulous margarita is fresh lime juice. Not in the mood to squeeze all those limes? Try Simply Limeade (available in grocery stores) and save time when making your own version of  a killer margaritas.

Easy frozen margaritas:

  • 1 (6-ounce) can limeade, frozen
  • Gold tequila (or any good-quality tequila)
  • Triple sec
  • Ice
  1. In a blender, add frozen limeade.
  2. Then using the empty limeade can as a measuring device, add one can tequila and ½ can triple sec.
  3. Fill blender with ice and blend until frozen.
  4. Add more ice as it blends down. The blender should be full when finished.
  5. Pour into glasses and garnish with lime.

Frozen Margarita on Cinco de Mayo

An interesting margarita that grabbed my attention is a specialty of a 5- star hotel in Southern California – the Avocado Margarita.

I’m not sure I’m brave enough to try it yet – I’ll think I’ll stick to eating avocados in my guacamole.

Traditions of the Belmont Stakes

Belmont Park in Elmont, New York is the site of the Belmont Stakes. First run in 1867, it is the oldest of the Triple Crown of Thoroughbred Racing, predating the Preakness by six years and the Kentucky Derby by eight years.

Known as “The Test of Champions”, the Belmont Stakes is the final race of the Triple Crown and is run in early June, five weeks after the Kentucky Derby and two weeks after the Preakness Stakes.  The winner of this race is draped with a blanket of white carnations.

The White Carnation is also the name of what was the traditional drink of the Belmont until 1997 when it was replaced with the Belmont Breeze.

 

In 1997, the traditional theme song “Sidewalks of New York” but was changed to “New York, New York” to appeal to a younger crowd.

In 1997, another new Belmont tradition began of painting the colors of the winner’s silks on a four foot tall cast iron horse and jockey on the fence around the paddock. If the winner is also a Triple Crown winner, the cast iron statute is moved to a permanent position with the other Triple Crown winners on the fence.

Cocktail of the Belmont Stakes: The White Carnation

The White Carnation was the traditional drink of the Belmont Stakes, the third and final race in the Triple Crown of Thoroughbred Racing, until 1997 when it was replaced with the Belmont Breeze.

Refreshing and easier to make than the Kentucky Derby’s Mint Julep, this is fun cocktail to offer Belmont party guests.

Ingredients:

  • 2 oz. Vodka
  • 1/2 oz. Peach Schnapps
  • 2 oz. Orange Juice
  • 1/2 oz. Soda or Club Soda (more if you prefer)
  • Splash of Cream
  • Crushed ice

Preparation:

Stir liquors, orange juice and soda together and pour over ice in a highball or martini glass. Splash cream over top. Garnish with an orange slice.

Makes 1 drink.

Talk Derby to Me: How to Play Horseshoes

Playing horseshoes is a fun activity for your Kentucky Derby party guests. It’s easy, you won’t get dirty, and you can mingle and play at the same time.

Set up an area outside away from the party where non-playing guests won’t walk into a flying horseshoe or get hurt.  Pick two teams of two people.  You will need four horseshoes and two stakes. The stakes traditionally are placed 40 feet apart.  The game is played by players alternating turns tossing horseshoes at stakes in the ground.

There are two ways to score in a game of horseshoes: by throwing “ringers,” or by throwing the horseshoe nearest to the opposite stake.  A “ringer” is a thrown horseshoe where the horseshoe completely encircles the stake. The game’s scoring system is where the expression “Close only counts in horseshoes and hand grenades” comes from.

To total your points:

1 Point   – The nearest horseshoe to the stake within 6 inches

2 Points – If both of one player’s horseshoes are closer than the opponent’s or a leaner (a leaner is where the horseshoe literally “leans” on the stake)

3 Points – A ringer! (If each player throws a ringer, the ringers cancel and no points are scored)

Most games are played to 21 and the winner must win by two points.

The official drink of the Kentucky Derby is the Mint Julep. If you’re thinking about serving original Mint Juleps at your Kentucky Derby Party, you will need to start them way in advance and whichever recipe you choose, you will need lots and lots and lots of crushed or shaved ice!

The original mint julep takes 4-6 hours for the bourbon-sugar mixture to sit or you can make the quick  or really quick versions that don’t require any wait time for the flavors to blend.


Original Mint Julep Recipe

Ingredients:

  • 1/2 cup sugar
  • 1 cup water (prefer distilled or bottled)
  • 8 fresh mint sprigs finely chopped (Use only the leaves, no stems)
  • 1 quart bourbon (Early Times, Jim Beam but Wild Turkey will suffice)
  • Fresh mint sprigs for garnish

Preparation:
Combine sugar, water, chopped mint leaves and bourbon in a glass container and stir until the sugar dissolves*. Cover and let stand 4 -6 hours.

To serve:
Strain the bourbon-sugar mixture into a large pitcher and discard the chopped mint. Fill your choice of glass with cracked ice; add bourbon-sugar mixture, and garnish with mint sprigs. *You might want to make extra of the bourbon-sugar mixture so you don’t run out.

Quick Kentucky Derby Mint Juleps Recipe

Makes one mint julep

Ingredients:

  • 1 tsp sugar
  • 1/4 oz water
  • bourbon
  • mint sprigs
  • crushed ice

Directions:

In a bowl, place several fresh mint sprigs (without stems), 1 tsp. of sugar and 1/4 ounce of water.

Crush the leaves with a spoon or a muddler and stir until sugar dissolves.

Fill a chilled tumbler with crushed ice, fill with choice of Bourbon and top with strained sugar-mint mixture. Or place a bit of the sugar-mint mixture into the chilled glass.

Add a layer of crushed ice. Continue at least one more time, topping with ice, then top off with bourbon.

Garnish with fresh mint sprigs.

Serve and enjoy!

Really, Really Quick Mint Julep Recipe for a Crowd

Ingredients:

  • 2 cups sugar
  • 2 teaspoons pure mint extract (not peppermint)
  • 2 drops green food coloring
  • Water
  • Bourbon Whiskey

Directions:
Combine first three ingredients in a container a little larger than one gallon. Add water to make a gallon. Stir until the sugar is dissolved.

For each drink, fill the cup to the brim with cracked or shaved ice. Pour 2 ounces of bourbon over the ice. Pour 2 ounces of the mix over ice. Garnish with a sprig of mint.
